Chicken Salad with Raw Chipotle Dressing
This recipe uses a clean version of the Mexican sauce ‘Chipotle’.
It can be as spicy or mild as you like, making a great hearty salad the whole family will enjoy.
Feel free to alter the salad ingredients with what you have in your fridge.
Kale is great as it has many benefits, such as being high in iron, packed with powerful antioxidants, a great anti-inflammatory food, supporting the cardiovascular system by helping to lower cholesterol, high in Vitamin A (good for vision and skin), Vitamin C (great for the immune system and metabolism).
It's also a great detox food cleansing the liver.
Ingredients
Chipotle Dressing
1 Avocado
1 tsp Onion powder
1 tsp Cumin
1 tsp Chilli powder or cayenne pepper
1 tsp Garlic powder
Salt to taste
2 Tbs Lemon juice (to taste)
A touch of olive or avocado oil
Goat cheese (optional)
Toasted seeds (optional)
Salad
600g Chicken Brest
1 Tbs any spices you wish for the chicken (I used Cajun)
1/2 Bunch kale
1/2 Capsicum chopped
1/2 Cup sliced mushrooms
1/2 Cup green beans cooked
Method
Make the dressing first. Blend all ingredients for the dressing in a high-speed blender until it is nice and creamy. Set aside.
Cut the chicken breast into strips and sprinkle with your choice of seasoning.
Grill on the BBQ or a grill plate till tender.
Combine all salad ingredients in a large bowl and add chicken.
Mix the dressing into the salad and serve in individual bowls.
Option to add some goat's cheese and toasted seeds before serving.
