Raw Chocolate & Coconut Protein Balls
This is a simple refined-sugar-free recipe that is easy to make and is a great treat.
Easy to take to school or work or even great to serve when having guests.
Feel free to play with the quantities, as they are a rough guide.
Makes approximately 20 balls.
Ingredients
2 cups shredded coconut
1/4 cup Raw Cacao
1/4 cup Chocolate Protein Powder
1/2 cup coconut oil - melted
2 tbsp coconut milk (optional)
1 tbsp rice malt syrup (or 1 tbsp stevia if you prefer)
Method
Combine all ingredients in a bowl, adding a little coconut oil if the mixture becomes dry. It should be a moist consistency but not too wet.
Roll the mixture into balls, keeping some shredded coconut spare for rolling.
Finally, roll the balls in the extra shredded coconut and place in the freezer for approximately 1 hour.
