Pumpkin Pancakes

Age Appropriate: 7/8 months

Ingredients:

  • 1 cup cooked pumpkin ( you can make this ahead of time use as a puree with

    some bone broth if using purees, can batch cook and freeze in 1 cup portions too)

  • 3 egg yolks

  • 1 Tbs ground flaxseed

  • 1 cup buckwheat flour

  • 1 tsp baking powder ( aluminum free if possible)

  • ½ cup coconut milk - I use coco quench or nutty bruce

  • 1 scoop collagen Gelpro Australia or Atp science No way collagen peptide no flavour

Method:

  1. I like to put all the ingredients into the blender and blend until smooth. If the mixture is a bit thick add a bit more milk.

  2. To make things faster use two pans with a liberal amount of coconut oil,

    spoon the mixture into piklet size. Cook on low/medium until bubble start to

    form on top. Flip a cook for a minute or two on the other side.

  3. Serve as is or slice lengthwise into ‘soldiers’ for an easy way for little hands

    to grip the pancake.

  4. Option to serve with coconut yoghurt, berries and hemps seeds also.

These are great served with coconut yogurt, cut berries and some hemp seeds for extra protein.
