Fresh And Clean Rice Paper Rolls
A great option to have for lunch or dinner or even the 3 pm arvo snack. Protein is so important in pregnancy and postpartum so I find this a great way to get some much-needed protein carbs and I even love adding avocado for some healthy fats. I have used pea shoots, carrots and cucumber here in this recipe but you really can add whatever you like. Shredded purple cabbage looks great and adds a lovely crunch. I have included a yummie delicious recipe to cook the chicken here but I often just use leftover roast chicken. *See notes
This is also a great activity to do with the older kids and get them to ‘help you roll’ the rice paper rolls.
Ingredients:
Makes 12 pieces
400ml Can Coconut Milk
1 Teaspoons Finely Grated Lime Rind
2 Tablespoons Tamari Sauce
500g Chicken breast or Prawns
12 Small Rice Paper Rounds+
100g Vermicelli Rice Noodles, Cooked and Cooled
1 Cup Snow Pea Shoots
1 Carrot, Peeled And grated
4 Baby cucumbers, Thinly Sliced 1 Cup
Thai Basil Leaves
Optional: 2 Long Green Chillies, Seeded And Thinly Sliced Lengthways
TO Serve:
Sesame seeds toasted on the pan for a few minutes

Method:
Place the coconut milk, lime rind, and tamari sauce in a medium saucepan over medium heat and bring to a boil. Add the chicken or prawns, cover, reduce heat to low, and cook for 15 minutes or until cooked. Remove from heat, reserving ½ cup of the cooking liquid. *For a quick, no fuss super easy option: just use leftover roast chicken. We have a roast chook for lunches or dinner at least once a week so its an easy way to have protein on hand.
Shred the chicken and place it in a large bowl with the reserved cooking liquid. Mix to combine.
Soften a rice paper round in warm water for 30 seconds or until soft. Remove from the water and place on a clean, damp tea towel. Place some vermicelli noodles, snow pea shoots, carrots, cucumbers, chicken, basil, and chilli in the middle of the rice paper roll.
Fold the bottom edge over the filling, fold the 2 sides over to secure the filling, and roll to enclose. Repeat with the remaining rice paper rounds and ingredients.
Serve with tamari and toasted sesames and enjoy
