Easy Meatloaf

This is a nutrient-packed meatloaf offering essential benefits for maternal and fetal health. Lean meats provide high-quality protein, while vegetables supply vital vitamins and minerals such as folate and vitamin C, and eggs provide choline and extra protein. 

This is a great dish to have ready and prepped for a snack or meal, and is also a great take-to-work option. Have a portion in your Tupperware container, some peas on the side, and drizzle with a bit of olive or macadamia oil.

Ingredients

  • 500g mince – turkey, chicken, beef or lamb

  • 4 Tbs almond meal or other nut meal

  • 2 whole eggs beaten

  • 4 Tbs herbs of choice: fresh or dried parsley, paprika, coriander, or rosemary all work well

  • 2 grated medium-sized zucchinis - grated carrots work well, too

  • Salt and pepper to season.

Method

  1. Preheat oven to 180 degrees

  2. Grease a baking tin with coconut oil

  3. Combine all ingredients in a bowl. With clean hands, squeeze and mix all ingredients.

  4. Place into baking tin and cook for approx. 20-30min.

  5. Allow to cool for about 20 min, remove from tin, slice into 5/6 portions, and have on stand-by for the week.
